Looking for the ultimate bowl of ramen?!  Look no further.  You will find the absolute best ramen noodles, veggies, ways to prepare, and sauces!

Ramen is the best comfort food right!?  I have been in such a ramen kick lately and I wanted to share all of the delicousness I have discovered.

The best vegan ramen toppings include vegetables, sauces, and noodles.  Plus the ultimate sauce that is good on EVERYTHING!  Most of these meals come in under 500 calories and are extremely filling.  A great mid day meal or dinner for anyone who just loves noods!

I keep this list whole food plant based and vegan so you know it’s clean and healthy and will help you meet your goals whether they be weight loss or just eating healthier.  I have also found that my meat eating family are perfectly happy with a big bowl of noodles in front of them and they aren’t asking where the pork and chicken are!

Let’s start with the star of the show. RAMEN!!

I started out eating instant noodles in a cup with the flavor packet ~ I’m not so sure these are good for you…and they’re definitely more expensive.

These three are absolutely amazing but…expensive and I don’t know how healthy they actually are…

After reading several google articles on ramen… I’m pretty sure eating it will kill you (I may be interpreting these articles in a slightly dramatic way). Despite people living on it for the better part of their college years.  Being a hungry girl, I was taking down 2 at a time.  Coming in at almost $2.50 per cup it got kind of expensive.  Plus I would add things to make them more delicious.

I found these plain noodles at Costco and I control the spices (especially sodium and preservatives) that is going into them.

Now I feel better about eating ramen a few times a week even though I actually want to eat it every single day!

 

What to put on/with my ramen?

VEGGIES! Whatever you like.  I have found the best and most authentic to be;

Toppings:

-broccolli

-snap peas or snow peas

-mushrooms (white button, cremini, oyster, or shitake)

-asparagus

-bok choi

-spinach

-shredded carrots – A MUST

-japanese Spice from Trader Joes – AMAZING!

-sesame Seeds

-nori chunks

 

The Ultimate Ramen Sauce

How adventurous are you?  How spicy do you like it?

Basics:

Any combination of these items or even some of them just plain will make your tastebuds happy!

Soy Sauce/Tamari/Coconut Aminos

Hot Sauce/Chili Paste – These are two of the best vegan options:

Rice Wine Vinegar/Red Wine Vinegar

Maple Syrup/Honey (not vegan but works)

Sunbutter/Nutbutter

Teryaki Sauce

Sweet Chili Sauce

So….any combo of these ingredients will make an amazing sauce but here is the best one:

BEST Ramen Sauce:

This recipe is for 1 – 2 servings – I would double this if I was feeling my family of 4.

2 TBS Sunbutter/Nutbutter

1 TBS Rice Wine or Redwine Vinegar

2 TBS Soy Sauce

1 TBS Chili Sauce or Gochujang (this is interchangeable based on your heat tolerance)

 

How do you make these delicious noods?

The easy lunch way (microwave in a bowl):

Plain Ramen:

So easy!  Pour boiling water over them or microwave them.  Sometimes I put them into a big bowl with the veggies and cover it and microwave it all together.  If you already have pre steamed veggies then just do the boiling water method.

Cup of Noodles:

You can also buy the cup of noodles and put them into a large bowl with your water and veggies and microwave covered so the noodles steam the veggies.  You can drain some water and then add your sauce.

The slightly tastier dinner way (more like a stir fry):

Prep Time 15 Minutes – Serves 2

1 onion diced

2 TBS Garlic

1 TBS Grated Ginger

Veggies for Toppings (see above)

Sauce (see above and double the recipe)

Pour the boiling water over the noodles (I use about 4 squares if you buy these click here to order it on amazon  – let them sit until they’re tender.

Water saute onion, ginger, and garlic in water.  Then add veggies that take a little longer to cook with some broth and cover and steam.  Add the noodles and sauce and toss to coat.
