7 Incredible Vegan Recipes for Breakfast:
1. Breakfast Burrito
This is an easy vegan meal for breakfast and is so yummy and you can do with with whatever you have around. Like the starch solution recommends I try to make it 50/50 inside. 1/2 starch and 1/2 non-starchy vegetable.
You’ll Need:
1 large whole wheat or rice tortilla
1/2 cup white or brown rice
1/4 cup corn and bean salsa (1 can black beans rinsed 1 cup thawed frozen corn. 1/4 salsa of your choice – This is something I make and keep for the week for salads and whatever else you can think to put this delicousness on top of)
Handful of Spinach
Sliced Bell Pepper
1/4 Avocado
Squirt of Hotsauce
Salsa to Taste
Roll all of these ingredients up into the tortilla folding the sides in to keep it all together.
This can be done with any veggies. I used some steamed zucchini the other day and it was sooo good.
2. Hashbrowns
My absolute favorite breakfast!
2 – 3 cups frozen oil-free has browns (Trader Joes brand is my favorite)
1/2 tsp onion powder
1/2 tsp mushroom umami powder (I get this from Trade Joes)
1 tsp garlic powder
1 zucchini or 1 bundle of asparagus or 2 cups of broccoli florets
Put potatoes onto Griddler or sheet pan and sprinkle with spices. My favorite way to make these is on my Griddler. If you use the Griddler, let it cook until it stops steaming – its usually after the green light turns on. If it’s sticking, it’s not ready yet. Wait until it doesn’t stick anymore.
Before I had the Griddler, I did it on a tray in the toaster oven. I did the broiler for 15 minutes on one side and then flipped it over and 10 minutes on the other side.
Steam your zucchini/broccoli/asparagus while the taters are cooking so they’re ready when hash browns are ready.
Us the 50/50 method for your plate if losing weight is your goal. Eat as much as you like but make sure 1/2 of your plate is the zucchini/broccoli/asparagus.
Also, ketchup is fine! It does have some sugar but it will not slow weight loss or deter your day. I always have ketchup or barbecue sauce with my hash browns. I also like a little soy sauce on whatever steamed veggie I’m having on the side.
Either method is delicious.
3. Oatmeal
This is an easy vegan recipe for beginners. This go to oatmeal with kick start your weight loss. It will keep you full for hours and is oh so delicious
You’ll Need:
1/2 cup quick oats
1 banana
2/3 cup hot water
2 TBS Plant Milk or Trader Joes Fat Free Cocount Creamer
1 tsp cinnamon
1/4 cup blueberries – frozen or fresh
Mash the banana into the bowl with fork. Add the oatmeal and water. Microwave for 1 – 2 minutes. Add the cinnamon, blueberries and plant milk.
I also use unsweetened cocoa powder and few vegan chocolate chips if I’m bored of blueberries
4. Oatmeal with Zucchini
The zucchini is so mild and you won’t even notice it’s there! Get those veggies in girl! This is an easy vegan recipe for breakfast that is healthy!
You’ll need:
1/2 cup quick oats
1/2 zucchini shredded
1/2 cup water
1/2 cup berries
1 tsp cinnamon
1 banana
Mash the banana in a bowl and add the oatmeal, zucchini, and water. Microwave for 2 mins. You can also do this on the stove top until all of the water is absorbed. Mix in cinnamon and top with berries. The zucchini is the best way to get those non-starchy veggies in at breakfast. Enjoy!
5. Best Vegan Smoothie
The very best weight loss smoothie
You’ll need:
2 handfuls of spinach or other dark leafy green – sometimes I do a combo of kale and spinach or some collards
2 mini cucumbers or 1/2 of a full cucumber
1/2 cup frozen blueberries
1 banana
1/2 cup frozen mango.
1 cup water
1 TBS ground flax seed
Combine all ingredients in your high speed blender (regular blender works too). Blend until smooth and enjoy! Think of it like drinking nutrition. I use this as meal replacement because it is about 400 – 500 calories when all is said and done. Enjoy!
6. Avocado Toast
You’ll Need:
2 pieces of ezekiel bread or Dave’s Seed Bread toasted
1/2 Avocado
Pickled Onion (optional but delicious – to make: boil 1 cup white vinegar and 1 cup water – add a cut up purple onion – put the vinegar mixture and onion in a mason jar to sit – eat as soon as they cool down – even better the next day!)
Mash the avocado onto the bread and top with black pepper and pickled onion.

You’ll Need:

1/2 cup bell pepper cubed
1/2 onion diced
1 cup spinach
1/2 cup mushrooms
1/4 cup bell peppers (frozen are great for this)
1 tsp onion salt or onion powder
