The Ultimate Weight Loss Chili

Want to lose weight eating the best comfort food on the planet?  Look no further.  This weight loss chili is a staple in my house for myself, my kids, and my husband.  I make it every week and we all love it!

I’m down 35 pounds and I can’t wait to keep eating this and losing more weight.

We use it for tacos, burrito bowls, or just over rice.  It’s so versatile.  You won’t even miss the meat!

By leaving out the meat you’re lowering the calorie density and making this meal overall much healthier and cheper.

Recipe Info:

Makes 6 – 8 portions

Prep time 10 minutes

Cook time 45 mins

Ingredients:

1 onion diced

1 TBS garlic diced (I used the pre-cut jarred kind)

2 bell peppers diced

1 jalapeno pepper (leave out if you don’t like things spicy or kids are going to eat it)

1 can black beans rinsed

1 can kidney beans rinsed

1 can diced tomatoes

1 cup red lentils rinsed

1 1/2 cups frozen corn (use more or less depending on how you like it)

2 TBS chili powder

1 TBS paprika

1 TBS tumeric

1 TBS cayenne pepper (either use less or more depending on how spicy you like things)

1 TBS cumin

1 TBS Better Than Boullion Vegetable (This does contain some salt)

3 cups water

Healthy Lunch Ideas for Weight Loss

Instructions:

Dice all vegetables and add to a large pot (click here to buy the best chili pot).  Water saute on medium-high heat – do not use oil – keep calorie density down by using water not oil.  Just don’t let them burn.  Monitor veggies and add a little more water as you go as needed.  Saute for 5 – 7 minutes until veggies are translucent.

Add spices and coat the vegetables and let this cook for 1 minute.  Add the rest of the ingredients.

Let this cook for about 30 – 40 minutes until the red lentils disappear.

Serve over rice, as taco meat, on nachos, or in a burrito bowl.
