1.Energy Balls
My kids absolutely love these and I love when they eat them! A great source of healthy calories and nutrition for them. Like most of my recipes, you can use what you have on hand and make easy substitutions. Some other add-ins are granola toppings, coconut, craisins, chopped nuts (if you can eat them).
You’ll Need:
1 cup oats (I use quick oats)
1/2 cup vegan chocolate chips (I use enjoy life because they’re nut free)
1/2 cup raisins
1/2 cup ground flax seeds
1/2 cup Sunbutter (you could also use peanut butter or any other nut/seed butter)
1/3 cup pure maple syrup
1 tsp vanilla
Mix all ingredients in a large mixing bowl. Unfortunately, the best way I have found to mix this, is with my hands. Roll into bite sized balls and put on to a baking sheet to freeze. If the balls and crumbling in your hands and not sticking together, add more syrup. Put balls in the freezer to harden for about 2 – 3 hours. Keep them frozen or you can keep them in the fridge or room – temp. It’s up to you. Enjoy!
2. (Black Bean) Brownies
OMG I just made these for the first time the other day. Holy Moly! Not beany, just delicious!
You’ll Need:
1 can black beans rinsed
2 TBS cocoa powder
1/2 cup quick oats
1/2 tps salt
1/3 cup maple syrup
1/4 cup apple sauce
1/3 cup plant milk
1/tsp baking powder
1/4 – 1/2 chocolate chips (I use Enjoy Life brand – they’re vegan and top 8 allergy free)
Preheat oven to 375. Add all ingredients except chocolate chips into a blender. Blend until smooth and pour into a 9×13 or 8×8 non stick pan with parchment paper. Sprinkle with chocolate chips and bake for 18 – 20 minutes.
3. “nIce” Cream
A summer favorite of my husband and kids. We love the Neopolitan but make one or all of them and you’ll still be in heaven!
You’ll Need:
Frozen bananas – brown and speckled bananas are the best because they’re the sweetest. Break them into 1 – 2 inch chunks and freeze them overnight.
You’ll need:
Vanilla:
3 frozen bananas broken into. chunks
1 tsp vanilla
Chocolate: Strawberry:
3 frozen bananas broken into chunks 3 frozen bananas broken into chunks
1 tsp vanilla 1 tsp vanilla
2 tsp cocoa powder 1 cup chopped frozen or fresh strawberries (frozen are better)
Start with vanilla – the bananas need to be frozen. Put the chunks in to the blender (high-speed blenders work best). When it’s done, spoon it into a dish trying your best to keep it to 1/3 of the pan – (I used an 8×8 Pyrex (click here to purchase on Amazon) but anything will do.) Put in the freezer right away and while you’re making the other flavors. Then make the strawberry in the same blender – no need to clean in between. After it’s done, spoon it into the same container in the middle third, next to the vanilla, and pop it back into the freezer. Lastly, make the vanilla and spoon it into the last third of the dish. This dish is great right away or you can freeze overnight. Enjoy!
4. Banana Bread
My kids LOVE this banana bread and you will too! How else can we justify eating cake for breakfast?!
You’ll Need:
1 3/4 cup flour – any kind will do, GF, oat, whole wheat, whatever
1/3 cup apple sauce
1/3 c sugar
2 tsp baking powder
1/2 tsp baking soda
3 ripe bananas
1/4 tsp salt
1 TBS vanilla
1 tsp cinnamon
1/4 cup plant milk
1/4 cup chocolate chips (I use Enjoy Life – they’re vegan and top 8 allergy friendly)
Preheat oven to 350. Mash bananas in a bowl and add apple sauce and plant milk. Mix in dry ingredients until incorporated. Pour into a non-stick loaf pan (click here to buy one on amazon). Sprinkle with 1/4 cup chocolate chips. Bake 50 – 60 minutes. Enjoy!
5. Chia Pudding
If you love rice pudding or tapioca you will absolutely love this! This recipe makes one serving so double, triple, quadruple if you’re making them for the week.
You’ll Need:
2 TBS chia seeds
1/2 cup plant milk
1 TBS maple syrup (you can adjust to your taste for sweetness)
1/2 tsp vanilla
1/2 cup frozen fruit (optional)
Combine chia seeds and plant milk in a bowl or mason jar. Stir very well. Cover and put in fridge for at least 2 hours. Overnight is best. Stir again after an about an hour if you like to make sure the chia seeds aren’t all floating to the top. The next day or after 2 hours add the syrup and frozen fruit for flavor. Enjoy
Other ingredients to vary the flavor: 1 TBS cocoa powder – 1 TBS chocolate chips – 1 TBS coconut shreds or flakes – 1TBS chopped nuts or seeds
6. Chocolate Cake in a Cup
These one serving chocolate cakes are to die for and will cure any craving for chocolate. Make 15 for a party or one for your self. Either way you’ll love love love this recipe!
3 TBS Flour
2 TBS chocolate Chips
1.5 TBS sugar
1.5 TBS cocoa powder
pinch of salt
2 TBS apple sauce
3 TBS plant milk
Mix all ingredients in a mug or small bowl. Microwave for 50 – 60 seconds depending on your microwave. Less time for a fudgy-er cake. Enjoy!
7. Avocado Chocolate Mousse
OMG!!! This is my spin on a recipe a friend of mine gave me. I love avocado so even if you taste it….you’ll love it!
You’ll Need:
2 ripe avocados
1/4 cup unsweetened cocoa powder
1/4 pure maple syrup
1/4 cup coconut creamer (you could also use any plant milk)
1/4 cup melted vegan chocolate chips
Mix all ingredients in a high-speed blender or food processor. A regular blender doesn’t work as well – I know this from personal experience and having to hand mix it because my blender was a disaster. Adjust thickness with more or less creamer/plant milk. Adjust sweetness with more or less maple syrup. Enjoy!
8. Pumpkin Bites
A must try! I am a pumpkin pie fanatic! You’re going to love this stuff! You may even eat the filling by the spoonful! It’s that good!
You’ll Need:
12 – 15 wonton wrappers (vegan)
1 cup pumpkin pure (I use canned)
3/4 cup vegan cream cheese (I use Tofutti brand)
1/2 cup maple syrup (more or less to taste)
1 TBS pumpkin pie spice
Preheat oven to 350. Mix all ingredients in a bowl. That’s it for the filling! Put the wonton wrappers in a mini muffin tray (click here to purchase one on amazon) and fill them with the pumpkin filling. Bake for about 10 minutes – until wontons get brown and crispy. Enjoy with almond whipped cream if you’re feeling saucy!
9. Apple Pie Bites
These are sure to please. I’m a huge apple pie fan especially around Thanksgiving. I can’t go a year without a slice! Try these lighter alternatives for all the apple pie feels!
You’ll Need:
12 – 15 wonton wrappers (vegan)
2 honey crisp apples diced
1 TBS cinnamon
1tsp lemon juice
1/4 cup maple syrup
1/2 cup oats
Preheat oven to 350. Mix all ingredients in a bowl and spread on a parchment lined baking sheet. Bake apple filling until soft about 20 minutes. While apple filling is cooking, put wonton wrappers into a mini muffin try (click here to purchase one on amazon) to make the little cups. You will bake these until they’re a little brown and crispy (see below) – about 10 minutes.
Pull out the wontons and let them cool.
Once the apples are soft, remove them from the oven and fill the wonton cups with the filling.
Top with almond whipped cream or ice cream. Enjoy!
